My workaround was 1. Extract the MSIX setup using 7 zip 2. using Iconextractor, select the application and extract its icon 3. Save it (I made an affinity folder in my program files and stored it there so I dont alter it by mistake) 4. Right click the shortcut, browse icons, go to your folder and select 5. Save and enjoy -

The iconless shortcut is driving me crazy, how did you reach the part to get the icons for AP?
