It seems you are in "customize toolbar" mode. Close this panel and all will be as usual.

Make sure you have the correct image layer in the Layers panel selected and the Opacity at the top of the screen is set to 100% when the Inpainting tool is selected
If you still cant figure it out post a screenshot of the program showing the layers panel and the Inpainting tool selected which may help

No, the Inpainting Tool has it's own Opacity setting which you can see at the top left-hand side of the screen ONLY when you have the Inpainting Tool selected
If you do not see it make sure you have View > Show Context Toolbar ticked, then it will show

I just had a go on your hair picture concentrating on the stray/fine hairs on her head which your attempt did not capture. In this case the Matte Brush did a good job in capturing about 75% of the stray hairs
A professional retoucher would probably now spend another 2 hours using the foreground brush to paint in the remaining stray hairs but for me 10 minutes on this image is enough for me to be happy with the result.
All I will say is that the Matte Brush is not a magic tool, in some cases it can make the image worse, as you have found out, but in some cases it does a pretty good job, it all depends on what part of the image it is used on.
For me, the Foreground and Background brushes can do a better job when the Matte Brush does not perform as expected on part of an image
The more you use the refining tools (sliders and brushes) the more you get to know which to use on which image and on what part of the image

Here's a quick go on the legs picture, I did not use the Matte Brush at all, just played with the sliders
I will have a look at the hair picture tomorrow if no one else does today

If your raw files are all the same size you can create a macro to resize the document to 50% then select the macro within the Batch Job screen.
Should work but not going to test it as it's fast approaching beer o'clock

This works on the Desktop version not sure if it's the same/available on an iPad
Select the shape then Select > Outline
Select Outside for the "Alignment" setting in the dialogue box that appears and slide the Radius slider to the amount of pixels you want
Then fill or paint in the colour for the outline
(you may need to add a Raster layer to fill/paint onto)

You can also duplicate the macro, deselect all options up to the point of insertion, save the macro, edit the duplicate deselecting all the actions from insertion to end, save macro and then run macro 1, add necessary actions, run macro 2 and save.
Thatll minimize duplicate entries.
That said, I’ve found that macros should really be minimized to between 5-10 actions max and then several bundled in a folder as a workflow. It makes the editing process a lot easier and gives more flexibility during an edit.
Having more than 10 actions begins to become a “one click” edit approach which will leave lots of room for missing important adjustments along the edit/workflow...

Someone previously created a protractor for use in AD, maybe you could adapt/simplify it or make something similar for use in the Origami world of 22.5 degrees , until AD version 1.7 arrives next year.

Alternatively, using the Selection Brush Tool, just copy the front of the box (as shown below) onto a new layer.
Place your image below this layer and adjust as necessary.

One quick way....
Use the Selection brush to select the main part of the string ( don't worry about all the individual strands)
Make a new layer with this string selection
Add your text, in black, just under this new layer
Change blend mode of text to Overlay
Reduce text layer Opacity to about 90%

Very nice.
I like the grey at the top of the house but the porch area makes the grey look darker.
I wonder if a skilled decorator could use a lighter shade of grey below the porch, to make the whole front of house look more uniformed in colour.
