LaTeX is very special software. If you are happy with it continue using it by all means. MS Word is not fit to produce printed matter.
At the moment, if aim is to design in Publisher a simple book there is nothing to stop creating a 500 page book. Autoflow will typeset it in no time. Styling the text takes some time, but there is nothing in other competing apps to make it quicker either. Further refinement in tools is needed of course as designs grow more complicated but everything is doable with long documents even now. It just takes some manual work.

There have been a number of requests for that in Photo or Designer. Find and Replace is a function that came in with Publisher, and so far it remains exclusive to Publisher.

This puzzle actually has a really simple solution. There is no need to combine the two vector shapes in any way whatsoever – each of them remains completely editable. I have given an example below.
Put the rectangle (or, really, anything) in a layer over the background. Then, put the second shape (in this case, a star) over the rectangle. Set the Blend Mode of the top layer (the star) to "Erase." This will drill a hole through the entire image, revealing the blank canvas underneath. I know, I know, that's not what you want.
So, put the rectangle and the star into a Group. This will force the Erase blend mode to work ONLY on the rectangle. The star and the rectangle remain 100% editable, as does the background.
