In order for the object to be selected when the selection does not completely surround the object, you need to enable "Select object when intersects with the selection marquee", but note that this will select the object without fill as well. So that's not really what you're looking for.

And a side note for someone else.
Select object when intersects with the selection marquee" is a shortened form often seen in technical or instructional contexts, where some words may be omitted for brevity or simplicity. However, in standard written and spoken English, one would include "it" to make the sentence grammatically correct and clearer: "Select the object when it intersects with the selection marquee." Without "it," the sentence can appear incomplete or stylistically informal.

They should be off by default.
Create a new document, choose a text tool, and type some text. Does it default to this font (and did you want it to default to this font)?
If it didn't default to this font and choosing this font still has these Typography options set, you'll need to reset your defaults.
Create a new document, choose Frame Text, and draw a frame Choose the font Turn off the Typography options you didn't want Change the font back to whatever default font you normally use - skip if you want this font Choose Edit > Defaults > Save Good luck.

I tried the current beta with macOS Sonoma and it is already possible to chosse tools in the panes. From the biref usage I've done, it also looked stable.

I did used to have this setting selected in the previous version, but it didn't used to select the "empty" shape unless I also intersected the stroke.

Hi AVC, I'd never tried this before but it doesn't look like the program will do this. I tried setting my Typography options and then choosing Edit > Defaults > Save and while it saved the font I chose, it didn't save the Typography options I chose (Old Style figures). And besides, that would just be for this one font and wouldn't allow you to save a default configuration for other fonts.
Your best bet might be to create a character style for each font set up the way you like and then choose Save Styles as Default from the Text Style panel's menu. That way the style will be available in all future documents you create.

I would love there to be an app for iPhones that can open the .afdesign and .afphoto files and view them and allow an export to any desired format. I have all my Affinity documents in my iCloud drive and I can see them all in the file browser on phone, but only as a small preview. As soon as you click it you can't see anything. If there was a simple App for iPhone that would allow you to render it and also save as image file that would be extremely convenient, and would save me having to store PNGs next to each Affinity file.
