[How to convert-to-curves an image made by Select Sampled Colour]

So there is no function like the expand tool in Illustrator?  Can I use the selection to stamp out a shape into another shape for instance?  Surely there's a way around this.  Part of the logo is a font, that I do not know, so it would take ages to draw.

I have a client's logo that was a Jpeg, so I used Select Sampled Colour to "extract" the logo from the white background.

Now I've got a vector that can have an alpha channel, how can I convert the logo to curves, so that I can edit its colour fill.

I can only find convert to fill tutorials on shapes and text created originally within Affinity.
