Welcome to the forums.
You would need an artboard for this. Create an artboard from your document :
Or tick the artboard box when you create a new document:
And then you can use the "off artboard" space as a clipboard.

Mexwell, try going into the menu View > View Mode and uncheck Clip to Canvas (also switched using a / keystroke). This will allow anything in the gray area to be visible.
